You are in for a real treat when it comes to recipes this week. I’m sharing my favorite chicken broth recipe that is slow-cooked and oh so comforting.
It's slow-cooked chicken broth in all it’s "comforty" comfort food goodness! Delicious, nutrient-rich, and easier than pie. Can you really get any better than that?
Serves 8
4 small (bone in) chicken breasts, with skin
3 carrots, chopped
2 celery stalks, chopped
4 bay leaves
4 Tbsp apple cider vinegar
2 cups spinach
8 cups water
Season to taste with (salt, pepper, paprika, parsley)
Directions:
Place chicken breasts into a slow cooker.
Add chopped vegetables, vinegar, and herbs/spices.
Cover with hot water (about 8 cups).
Cook 8 hours on medium or overnight on low.
Add spinach 30 minutes before serving.
Serve and enjoy!
Tip: You can strain the broth before serving, or serve it with the cooked vegetables as soup.
