Try Me Recipe: Lemony Garlic Roasted Brussels Sprouts

High in fiber and loaded with flavor, this is a great recipe any time of the year. Brussels sprouts are one of my "go to" side dishes because they're so easy to find and prepare. I've even done them without the citrus and my daughter loves them!

Lemony Garlic Roasted Brussels Sprouts

Serves 4

1 lb Brussels sprouts (washed, ends removed, halved) 2-3 cloves of garlic (minced) 2 tablespoons extra virgin olive oil 2 teaspoons fresh lemon juice dash salt and pepper

Preheat oven to 400F.

In a bowl toss sprouts with garlic, oil, and lemon juice. Spread on a baking tray and season with salt and pepper.

Bake for about 15 minutes. Toss again (in pan).

Bake for another 10 minutes.

Serve with a great main course dish, like these Lemon & Herb Chicken Breasts and Enjoy!

BONUS: Brussels sprouts contain the fat-soluble bone-loving vitamin K. So, if they aren't on your regular menu plan, you may want to start eating them more often.
